Caldwell Esselstyn Biography and Career:

In 1956, Caldwell B. Esselstyn, Jr. earned his Bachelor of Arts degree from Yale University, and in 1961, he earned his Doctor of Medicine degree from the Western Reserve University School of Medicine. At the Olympic Games held in 1956, he competed in the sport of rowing and was awarded the gold medal. The Bronze Star was presented to him in 1968 for his service as an Army surgeon in Vietnam. The Cleveland Clinic was where he received his training as a surgeon, and he has been affiliated with the clinic ever since it opened in 1961. He served as President of the Staff and on the Board of Governors during his time there.  He is also the head of the section that deals with thyroid and parathyroid diseases in addition to being the chairman of the Breast Cancer Task Force.

The Benjamin Spock Award for Compassion in Medicine was given to him in 2005, making him the very first recipient of the award. In 2009, he was honoured by the Cleveland Clinic Alumni Association as a Distinguished Alumnus and received the award. In 2013, he was honoured with the George Herbert Walker Bush Award for Lifetime Achievement bestowed by Yale University.  The Case Western Reserve Medical School Distinguished Alumni Award was bestowed upon him the same year (2016). It was confirmed in July 2014 by his study of 200 patients that a significantly larger group of people can adhere to a plant-based diet and achieve the same significant arrest and reversal of disease by doing so. At the moment, he is in charge of directing the Cardiovascular Disease Prevention and Reversal Program at the Center for Integrative and Preventive Medicine at the Cleveland Clinic.

He bases it on a study that was conducted in the year 1990, in addition to the findings that he personally conducted and had published in a journal article titled “A Way to Reverse CAD” (coronary artery disease). Both studies came to the same conclusion: eating oil reduces flow-mediated vasodilation, which is medical jargon for the process of slowing blood flow. Fat-free and oil-free are not the same thing at all. Esselstyn does not advocate eliminating all fats from the diet, as fat is one of the macronutrients that is necessary for the proper functioning of our bodies.

Instead, Esselstyn and his colleagues, including as Dr. Dean Ornish and Dr. T. Colin Campbell, believe that fats should come from whole foods that are abundant in good fats, such as avocados, nuts, and seeds. This provides you with fat in addition to the healthful dietary fibre. A nutritionist named Jay Ziebart said that fibre assists in the regulation of digestion and absorption. The majority of Americans do not even come close to meeting the recommended daily limit of fibre set by the United States Department of Agriculture (USDA). There is no argument over the robust taste of olive oil. Some proponents of oil-free diets even argue that the issue lies in the fact that olive oil makes meals taste so nice that it encourages people to consume too much of it.

This is not supported by the findings of several research, which indicate that consuming a little olive oil might help you feel fuller for longer. According to Ziebart, “oil is simply not worth it” for the majority of her customers, “most of them have been fighting for many years to reduce weight and take back control of their health.” Ziebart and “Forks Over Knives” both provide straightforward exchanges. In cooking, water or vegetable broth may stand in for olive oil, even while sautéing; in baking, applesauce or mashed banana are suitable alternatives to olive oil.
